I am not usually impressed with homemade donuts - they just don't compare to the Krispy Kreme Hot Nows. However, this recipe is pretty dang good, y'all. And after we devoured the plate, we started coming up with other combinations - chocolate frosting with strawberry filling, lemon frosting with lemon curd, well, you get the idea!

Homemade Frosted & Jelly-Filled Donuts

canned home-style biscuits

jelly or preserve of your choice

vanilla frosting

sprinkles

vegetable oil, for frying

Pour about 1 inch of vegetable oil into a frying pan. Heat oil until it is at a good, medium heat. Carefully drop biscuit into hot oil. When the edges get a golden color, turn biscuit. If the biscuit is becoming too brown too quickly, turn the heat down some. Drain on paper towels and let cool - enough to handle donut without burning your fingers.

Put jelly into a decorating bag (or make your own using a zip baggie with a small hole snipped off one of the corners). Gently insert tip of the bag into the donut and squeeze the jelly into the center. Do this for each donut.

Place the canned vanilla frosting into a bowl and microwave for 30-40 seconds. Drop food coloring of your choice into the frosting and stir well. Take each donut and spread a generous amount of frosting over each. Quickly shake sprinkles on each iced donut.

Get a glass of milk and kick back and enjoy!

Chef Mr. Mom

Since my husband has been home for the past couple months, he has really honed his home keeping skills! I have gotten spoiled with all the laundry caught up, clean dishes, vacuumed carpets, and yard work done that I almost dread him going back to work!
I am especially proud of his culinary efforts! Sure, he can grill a mean steak, and no one (including myself) cooks toll house cookies like he does, but that was about as adventurous as he was willing to get. Until...he got bored - cooking hamburgers, spaghetti, french fries...
He has since decided to actually READ and create dinner from a recipe! I have to tell you, this is no small feat. He is learning what all those cool terms mean - al dente, whisk briskly, separate the eggs, etc. And guess what? He is really cooking! I am so proud!
This is a recipe I picked up over at The Southern Plate blog. I printed it out, and voila! Mr. Hutson made this wonderful dish yesterday with a salad and rolls. It was sincerely one of the best pasta dishes we have made at our house!

Garlic Chicken Farfalle

16 oz. This recipe does it for me! My Nanny kept these in the "Fridgidare" all the time. Once the pickle jar was almost empty, she started a new batch! This pickle is tart, sweet, crunchy, and just plain delish! I love to eat these with salty fried catfish or southern fried chicken. I even chop up the pickle slices to use in place of relish in potato, chicken or tuna salads. It is as much a staple in my kitchen as the mayonnaise and butter is!

Candied Dill Pickles

One large jar whole dill pickles

3 cups sugar

½ cup white vinegar

heaping tablespoon of pickling spice

cheesecloth, cut into a 3“ x 3” square

Drain off pickles into a large bowl, reserving about a half cup of pickle juice (save for later). Pickles need to “sit” for about four days, turning the jar upside down every so often to mix the juices.

After 4-5 days, pickles are ready to enjoy!

Bathroom Renovation Part Deaux

I posted photos of my hubby painting our master bathroom MONTHS ago with the promise of posting more photos. Well, believe it or not, months and months of living with a half painted bath finally came to an end this past weekend!

The boys loaded up and went hunting in Mississippi last weekend and I just made up my mind to get the bathroom closer to being done. I painted the walls, bought new bath mats and bathroom accessories (love. bed. bath. and. beyond), then hung some new artwork.

I am pleased in the direction it is going...a little mod, a little traditional. I know, those two things aren't supposed to go together in a perfect world, but I am rather eclectic and it works great for me!

I have to get new faucets and towel bars to replace the shiny gold ones I currently have - circa 1997. It seems kind of a shame, they were expensive Delta faucets and really posh back-in-the-day. But I can't stand the gold anymore! Brushed nickel is what I am going to replace the gold with.

I am going to do a project and take down my faded shiny gold vanity lights and spray them with a hammered metal spray paint. I figured if it doesn't work out, I am only out a few cans of spray paint! More to come later...

Taking up a collection...

I have so many collections of things, stuff, and whatnots. I have an obsession for finding items that go together, then displaying them in different ways. My collections are mostly antiques and kitsch-y items. Some of them are pretty, some are funky and a few of them are a bit strange! Anyway, I wanted to share a few with you. The idea is to find something that strikes you - whether it is a shape, a theme, a color, a material, or gadget. Arranged together, you can end up with some interesting vignettes around your home:
Cranberry depression glass:
<div class="separator" style="clear: both; I know that even though so many things happen in our lives, really truly sad things, there is a reason for it. HIS reason. We don't know what tomorrow holds for any of us, or if we will even have a tomorrow. But God does. If you are hurting this holiday, just remember His eye is on the sparrow, which means He values us - His children - so much more than the really small things. Merry Christmas.

Whew.

Christmas tree decorated? Ok, so I only have two weeks to enjoy this festive time, but better late than never I say!
Remember that Jesus is the reason for the season - yeah, that sounds cliché, but it is absolutely true. Peace.

Santa Baby

Isn't she the cutest thing you have ever seen? He is an accomplished chef, but can throw down the basics when he needs to! My son and I made these this morning, and it was hard to stay out of them! I am making up a name for them because I don't know the real one!

Pretzel Turtles a'la Chris

Windowpane shaped pretzels
Bag of Dove Chocolate Caramels
Nuts (Pecans or your favorite - I used walnuts)

Preheat oven to 350°. On a cookie sheet, lay out pretzels. Then top each with a Dove candy. Then finish it off with a nut on the top. Cook in oven a few (maybe 3 or 4) minutes just until chocolate melts enough to stick to the pretzel. Remove from oven - I gently pressed the nut on the top to make sure it stuck as well. Cool and INDULGE.

We are blessed.

There are many things I am thankful for. I am supremely thankful that I am about to be on vacation for the next ELEVEN DAYS. Kids, my house is gonna look like the North Pole at the end of next week! But, first...Turkey Day! I am in charge of the dressing and I have decided to share my top-secret recipe with y'all. It will bring the house down! Happy Thanksgiving Y'all!

Southern Cornbread Stuffing
This recipe is about as close to Grandma Myrtle Johnson’s recipe as I can get it! There are many things you can substitute or add to the basic recipe according to what you have in your pantry, or to suit your taste. The secret is to get it to the right consistency - not dry, but good and wet. For our big holiday gatherings at Mama’s house, I generally double the recipe and it makes so much I have to mix it in a large stock pot! Just experiment and make it your own!

For the cornbread:

1 cup self-rising cornmeal
½ cup self-rising flour
¾ cup buttermilk
2 eggs
2 tablespoons vegetable oil

For the dressing:

Cornbread, recipe above (or one box Jiffy mix)
7 slices oven-dried bread
1 sleeve saltine crackers or Ritz crackers
8 tablespoons butter
2 cups celery, chopped
1 large onion, chopped
7 cups chicken stock
1 teaspoon salt
Freshly ground black pepper
1 teaspoon sage (optional)
1 tablespoon poultry seasoning (optional)
5 eggs, beaten

For the cornbread, preheat oven to 350°. Add the celery and onion and cook until transparent, approximately 5 to 10 minutes. Pour the vegetable mixture over cornbread mixture. Add the stock, mix well, taste, and add salt, pepper to taste, sage, and poultry seasoning. Add beaten eggs and mix well. Reserve 2 heaping tablespoons of this mixture for the giblet gravy. And I realized just how much has happened in my life in just 3 short weeks.

Through the valley, I trudged through the death of my Nanny and her funeral. She was my inspiration, my mentor, my prayer warrior and my cheerleader. She left me a legacy of recipes, family photos and many notes and journals written by her throughout her 85 years. Her bible is dotted on most every page with her thoughts and notes - it is a special item that I will treasure forever. On the mountainside of this story, are the many friends and relatives that have shown their love and support. What a wonderful bunch of friends and family Nanny had that rallied around her! My love goes out to all of them, every one.

My other mountaintop experience is the baptism of my new baby niece, Abigail Samantha Goforth. And the best part - I am her Godmother! Y'all, this was a special time, I am telling you! Being raised in a Southern Baptist church, I had never experienced a Catholic Christening, and I was just amazed! She coo'd and smiled through the long, and rather formal ceremony...a big accomplishment for a tiny girl! I am looking forward to doing all the spoiling that comes along with being an Aunt and a Godmother!

My FL/GA Scary Halloween Football Party went off without a hitch, including the big win by the Gators! We had twenty-something family members cheering for their respective teams and eating from the huge Low Country Boil that my husband prepared. It was a great time, but sadly, my 13 year old informed me that he was going trick-or-treating with his older cousins WITHOUT ME. Sniff. The passage of time yet again...

And lastly, I am conquering the FLU... This. Stuff. Is. Horrible. Keep using the antibacterial goo because I assure you, this flu is not something I would wish on my enemies. Ok, maybe one or two. KIDDING.

I did have a great recipe given to me by my great cooking cousin, Lawton. This was an awesome dish and I am excited to share it with you...

Lawdog's Georgia Shrimp-n-Rice

1-1/2 lbs medium raw shrimp (deveined and peeled)
2 lbs cooked rice
1 10-1/2 oz can Cream of Mushroom (with garlic) soup
1 10-1/2 oz can Cream of Shrimp soup
1 medium sized green pepper (diced)
1 medium sized sweet onion (diced)
1 stick butter
3 teaspoons curry powder
1 teaspoon salt
1 teaspoon pepper
1 cup Cheddar cheese (shredded)

Preheat oven to 350 degrees
In a skillet, Sate the green peppers and onions over medium heat stirring often. Once the onions are semi translucent, add the shrimp to the skillet and cook until the shrimp is cooked thoroughly. Once cooked, strain excess liquid from mixture.

In a large bowl, mix all the ingredients together except the cheese. Place the mixture in a 13x9 dish and bake for 30 minutes or until bubbling, then add cheese topping and return to oven for 10 minutes.

Take comfort...

Sorry friendly blog-readers! I know I have been off my game here lately and not posting any great ideas or delicious recipes. Fact is, my Nanny, who was my cooking teacher and inspiration for many years, is on her last few days. We have been very involved with her the past couple of weeks - spending time and making her comfortable. A very heart-felt thanks to all who know her and have been praying for her and my granddaddy. She will be with her Jesus very soon!

I threw together this dish the other night, thinking it would give me the "warm and fuzzies". And let me tell you... IT DID! This is definitely a keeper. A little bit of a twist on classic Southern Chicken and Rice, this doctored-up version will make you smack your lips in sheer pleasure!

Chicken-N-Rice a la Jules

2 pounds boneless chicken, chopped

2 tblsp. olive oil

salt & pepper

2 tblsp. dried onions

1 tblsp. dried red & green peppers (or 1/4 cup fresh, chopped)

2 cups rice

2 cups chicken broth

2 cups water

1 cup frozen english peas

2 tblsp. butter

Using a large covered pan (I used my 4" cast iron fryer), saute the chicken in the olive oil over medium heat. Add salt and pepper to taste. Cook until no longer pink. Add dried onions, dried peppers, and two cups rice. Stir ingredients together and pour the chicken broth and water into the mixture and cook until softly bubbling. Sprinkle the frozen peas across the top and place lid on and cook on low heat 20-25 minutes or until rice is cooked. Add butter to mixture right before serving. Spoon beef mixture onto rolls, top with mozarella slices and sandwich toppings of your choice.

Olé Y'all!

GREAT recipe! Well, not really. But I am sniffing around for it pretty much every day now! I. LOVE. FALL. Y'ALL. It is my absolute favorite season, with pumpkins, leaves, apples, ghosts and witches...it is just THE BEST.
I came across this cake recipe, and it will get you in the mood for cool evenings by a fire! I like the idea of spice cake, and I really don't want it any other time of year.
This has a rich, caramel colored butterscotch frosting that is the perfect partner with the spices in the cake itself. I chose to use a bundt pan, but I think you could make it in a tube pan or even two round cake pans and frost in-between if you wanted too.

HARVEST CAKE

2-1/2 c. sifted cake flour

3-1/2 tsp. baking powder

1 tsp. salt

1/2 tsp. cinnamon

1/4 tsp. nutmeg

1/4 tsp. allspice

3/4 c. shortening

1 c. milk

1 tsp. vanilla

1-2/3 c. brown sugar, firmly packed

3 eggs, unbeaten

Stir shortening to soften. This should be an extra special treat - we are camping at Fort Clinch State Park in Fernandina Beach, Florida. Just a short walk from the beach! This is the perfect time of the year for beach activities because the weather is mild, the sun casts long shadows across the campgrounds, the touristas are gone, and - most importantly - the bugs are minimal (or, at least, I hope they are!).
In the celebration of the up-coming parking of the "Prowler" at the hunting club for the next several months, my husband purchased the mack daddy luxury of travel trailer luxuries...a Sony 26" HDTV!!! Ok, so there might be a connection with "waiting for the right deal to come along" and football season, but hey, I am not complaining! What better way to watch the Gators than relaxing in my little home on wheels!
I don't have a particularly new dish to prepare this weekend, but I will share the menu at my next post...so, for now, see ya on the flip side of travel trailer bliss!

Short Week!

Ok, so the best thing about a 3-day weekend is the fact that you end up with a 4-day work week! How much more awesome could that be???
I completely enjoyed my holiday...I finally got to totally spoil my newest 12-week old niece,
Abby. She is so tiny, petite and just plain perfect. We completely have a connection! I have the honor of becoming her Godmother at her Christening ceremony next month. I am a Southern Baptist, so this is completely new to me, but I am thrilled!
We also spent the weekend getting the camper ready for our camping trip to Ft. Clinch next weekend. All the food is bought and in the camper fridge, the menus are all written out, and everything else is stocked and ready to go with the exception of clothes, which I am sure I will have ready in the next day or so. Camping has become my "total getaway". I love the fact that I don't have any more responsibility than just eating and relaxing! Ft. Clinch will be a wonderful end-of-summer destination. It is right on the beach, and there are tons of activities - hiking, biking, swimming, fishing, shelling, touring the fort...I had better enjoy this trip because soon very soon my precious, delightfully decorated camper will get confiscated by my husband and son to be parked at their "hunting camp" for the winter. I am scared of how it will look when I get it back in the spring!
To finish off my weekend, I made a delish recipe for supper last night and just have to share it with you! It is a Spanish dish, and FULL of flavor! I served it over Spanish rice and it definitely lived up to flavor and passed the teenager test - he loved it! Enjoy!

Basque Chicken

2 medium yellow onions, thinly sliced
6 garlic cloves, thinly sliced
3 to 4 pounds chicken breasts, with bone and skin
1 teaspoon salt
1 teaspoon coarsely ground black pepper
2 tablespoons olive oil
1 tablespoon Spanish smoked paprika
3 to 4 medium tomatoes, peeled, seeded and chopped
1 (12-ounce) jar roasted red peppers, sliced or 2 roasted red peppers
1 cup reduced-sodium chicken broth
Instructions

1. During the height of the growing season I can be just as happy with a juicy tomato, mayonnaise and white bread sandwich as any steak from the finest steakhouse! Now that the season for tomatoes is sadly coming to an end, it is time to take advantage of what's left of this versatile and delectable produce with some fresh salsa! And just in time to serve it along with your favorite corn chips this weekend as college football kicks off and so does the tail-gating! First, the filet with the fontina cheese sauce was absolutely delish! And secondly, the matinee was a delight!

I always thought of Julia Childs in the Saturday Night Live skit that Dan Akroyd did years ago when he portrayed her cutting her finger and hilariously splurging blood all over the set. (which, by the way, this skit is featured in the movie).

On her television show she always seemed very fru-fru and proper, and as a young adult, Duck Confit didn't impress me in the least. I thought her comical and cooking food that I would never eat.

As I watched her story unfold in the movie, I found myself yearning to read her cookbook, Mastering The Art of French Cooking. The Paula Deen of her day, Julia perfected rich creams and literally used tons of butter! A cook after my own heart! I haven't defined myself as "loving" French food, but quite honestly, I haven't eaten or prepared French food - unless, of course, french fries count!

Her love of food and her desire to teach others learn to cook really spoke to the foodie in me. So - listen up family and friends - a wonderful Christmas or birthday gift for me would be her cookbook!

I encourage everyone who has an obsession with cooking (and/or eating) to GO SEE THIS MOVIE. It is a wonderful feel-good story that will leave you with a newfound appreciation for this amazing woman who brought so much to American cooks!

Game Day Snack!!!

OK, so this really wasn't made on game day, but it was a real hit with my family and definitely a recipe I will make when the weather gets a smidge cooler and the sound of cheering can be heard in the distance! My sweet son, Chandler, turns 13 today. I have been reflecting back all day to when he was a small child. A tuft of blonde hair and green eyes - such a pretty child, but hey, I am biased!
I am just bracing myself for all the new challenges of raising a teenager! He is so concerned about pimples, hair styles, name brand clothing...when did he get an opinion on what kind of tennis shoes he wears? It seems like yesterday I was dressing him in Osh Kosh B'gosh and having his portrait made every other holiday!

I look at him today, such a handsome young man, full of life and energy. Checking out girls. Here is the recipe! Enjoy!

My Great Aunt Frieda's Sour Cream Pound Cake

note: not for the faint of heart or anyone with cholestrol issues!!!

3 cups cake flour (I use Swan's)
3 cups sugar
4 sticks butter (this calls for the real deal - NO margarine!)
6 eggs, whites separated from yolks
1/2 pint of sour cream

If you follow this to the letter, you will have a delicious, Southern treat!

To prepare your cake pan (I use a tube pan), fold a square of wax paper into a triangle, then continue to fold it to a slender triangle. Snip both the small and large ends. Line the bottom of your tube pan with the donut hole-shaped wax paper and spray with Pam or spread butter liberally all over the inside of the cake pan.

Place cold egg whites in your mixer and mix on high until peaks form and eggs become thick. Set aside.

Next, cream together the sugar and butter until very creamy - I like to set it on medium high for a couple minutes. Add in the half pint of sour cream and blend again.

Measure out the 3 cups cake flour. Now this next step is so important and will make your cake a success! While the sugar/butter mixture is blending on medium speed, add a egg yolk and blend well. Next, add a 1/2 cup flour and blend well. Continue to do this until all egg yolks and flour is blended well. This alternating of yolk and flour is the secret!

Lastly, remove your mixer bowl from the mixer. Gently fold in the egg whites into your cake batter. Spoon batter into the tube pan and get rid of as many bubbles as possible by gently banging the cake pan on the countertop.

Place cake in the center of a 300° over and bake for 3 hours or a cake tester inserted into the cake comes out clean.

Let cool before removing from pan. Get ready to slap yo mama!!!

Pineapple Chicken Salad

<img style="float:left; margin:0 10px 10px 0;cursor:pointer; cursor:hand;width: 240px; height: 320px;" src="http://4.bp.blogspot.com/_tMG-g7rMhYk/SoA2drxP_-I/AAAAAAAAAP8/tXTu6Zl5cXY/s320/IMG_0335.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5368350639419031522" />
Can I just start out by saying that Cracker Barrel ROCKS. No kidding. This burger is full of flavor. You must follow it to the letter, and you will end up with a family favorite! Enjoy!

Onion Burgers

2 lbs. ground chuck
Salt & Pepper to taste
1 pkg. French Onion Soup mix
1 cup water
2 tblsp. flour
Sliced Sweet Onion
Butter & Olive Oil
Mayonnaise
Yellow Mustard
Hamburger Buns

Crumble and brown ground chuck in skillet. Salt and pepper meat to taste. When meat gets to slightly pink, add the dry onion soup mix. Stir. Sprinkle the 2 tblsp. flour over meat mixture and stir. Add the water, give it one last stir and turn to low and cover. Simmer for 20 minutes or until gravy is thickened.
Meanwhile, wrap buns in tin foil and warm in oven on 250° for 10-15 minutes. Heat up a little olive oil and butter in a skillet until bubbly. Place thick onion slices in the heated skillet, add salt and pepper to taste. Cook on both sides until transparent.
To assemble sandwich, slice heated bun and spread mayonnaise on one half and yellow mustard on the other half. Add a scoop of ground beef mixture and top with sautéed onions.
Serve Onion Burgers with homemade french fries made from sliced red potatoes, fried in oil and topped with kosher salt. YUM.

Still Trying to Be Inspired!

<img style="float:right; margin:0 0 10px 10px;cursor:pointer; cursor:hand;width: 320px; height: 286px;" src="http://1.bp.blogspot.com/_tMG-g7rMhYk/SnxjNczZ--I/AAAAAAAAAN8/19tlkgf5QaA/s320/weeki_wachee.preview.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5367273938640042978" />
So, here it is another week and I haven't done squat on my bathroom renovation. Blah. No thanks to a sinus infection. Anyway, I am buying paint tomorrow for the walls. And I am going to try the new metal finish spray paint on my current light fixtures to see if I can save a couple hundred dollars buying new ones. I basically like my fixtures, it is just dated with gold tone that has turned color. Not a good look. I have chosen a few pieces for hanging and decorating. I just love this print - it is an old photo taken at Weeki Wachee...will look great over my garden tub.

Where did July go?

I had intended to have my bathroom completely renovated months ago, only to find myself making a promise to finish it by the end of July. But here I am, still looking at peeling wallpaper and dirty trim. I have successfully chosen a beautiful apple shade to brighten up an otherwise tan space. I even found some beautiful candle accessories on 40% off at Cracker Barrel of all places! I am inspired to attack this project this weekend and plan to make some noticeable progress. I will post photos of my project after the weekend!
